I decided on an early dinner during my “staycation” in Connecticut and went with this yummy idea since my options appeared limited. Creativity breeds tasty genius. I made myself, my sister, and her husband their own plate:
-2 Cans black beans drained and warmed. I prefer Nature’s Path.
-2 Stalks chopped green onions.
-½ Bunch to a full bunch swiss chard chopped and sauteed.
-2 Cups egg whites
-6 Blue corn taco shells.
**This recipe serves 3-4 PPl. Scale down for one serving or scale up for more :-)
